Faith Reconstructed: When God Steps In

As promised, I have finally gotten my testimony typed up for ya'll.  Keep the Kleenex box handy, open your hearts and minds to hear from God, and be ready to share with someone else that needs encouragement in their life.  Before you begin to read, take some prayer time to ask God what He would want you to receive from this and how you might use it to reach others.  He has not give me this testimony in vain.  I feel so utterly undeserving of being given such a great responsibility as sharing His power, love, and peace.  When you finish reading, please praise God with me.  He is more than worthy of our praises and worship!

Almost nine years ago (07-21-03) I had a major 4-wheeler accident. We were out riding in the sand dunes of New Mexico with a bunch of friends.  We were making our last round on the track we'd been driving all day, when the wind changed directions, carving one of the hills into a 15 ft. cliff.  I drove right off that cliff without knowing.  It busted my helmet, ripped it off, and I landed at the bottom (on my back) with the 4-wheeler upside down, on my face. It completely crushed the left side of my face, nearly severed my left eye lid, and completely dislodged my left eye from it's socket (my eyeball was laying on my cheek). It was bad.

My husband was the one that found me, as he was only seconds behind me on the track.  He rushed to me and threw the four wheeler off of me.  Not a possible feat under normal circumstances, but his wife was under it, so it went flying lol.  As soon as he got the four wheeler off, the pressure was released and blood began to flow non-stop.  I am told that I was conscious from the moment that the bike was thrown off me, but I do not remember anything besides occasional events here and there for the first few days.

Hubby took his shirt off and tried to use it to apply pressure in order to stop the bleeding.  Unfortunately, the face likes to bleed....A LOT!  I soaked through his shirt, a friend's shirt, and Hubby's military issue pants (cut off to shorts).  Anyone that was near me and trying to get me out to the highway for the ambulance was completely covered in my blood.  That's a very eerie thought.

Where I had wrecked was a sand bowl.  There were hills on all sides and nothing but sport four wheelers to get me out.  Needless to say, they weren't having any success in getting me out of there.  When they were about to give up and call for the chopper to land in all of that sand, another friend showed up with their hunting four wheeler.  Praise the Lord!!  They loaded me on the deer rack on the back and were able to drive me out to a friend's truck.  That friend drove Hubby and I out to the highway in order to meet up with the ambulance that was waiting.

During that ride, I have my first memory of the event.  I remember not being able to move, see, talk, or feel anything.  All I could do was listen to Hubby saying, "It's going to be okay.  I've got you.  Don't worry.  Lord, please save her, heal her.  It's going to be okay."  I remember thinking, "I've never heard him so worked up, something bad has happened.  Who got hurt?"  Then, I remember hearing someone praying in tongues.  If you are not familiar with "praying in tongues" please read Acts Chp 2 of your Bible.  We are Pentecostal and fully believe in the workings of the Holy Spirit in our lives.  I began to listen to the voice that was praying and it hit me!!  I was the one praying in tongues, but I wasn't doing it!  Physically, there was no possible way for me to talk at that point, everything in my face was crushed!  God had taken over my tongue on my behalf!!!  I still get goosebumps when I think about.

Finally, we met up with the ambulance.  The only thing I remember from that part of it all, is that the gurney wouldn't collapse, so they kept slamming into the back of the ambulance to try and force it to collapse.  My thought during that was, "Yep, I'm dreaming.  Nothing bad is going on, it's just a dream.  'Cause nothing like this would happen in real life, only on Comedy Central or something. *laughing in my head*."  Not a dream though.

From there everything moved pretty quick, but like I said, I don't remember much.  When I first arrived at the ER, they found my eye had been placed back into my eye socket.  The docs flipped out and tried to blame the EMT's, but it wasn't them.  No one had touched my eye, but it was put back in the only perfectly protected spot I had on my face.  The Great Physician was doing His thing!!!  They put me through scans, x-rays, MRI's, and who knows what else at the first hospital, in Artesia, NM.  I later found out, that by their calculations, I had literally lost more blood than my body held.  Yet, I never lost consciousness and never had a blood transfusion.  Another amazing miracle from God!!!  (Still a lot more to go :-D )

While I was losing all this blood in the hospital, my entire church family was in the waiting room and surrounding the hospital in prayer groups.  Those that couldn't make it, or had gone to take care of my children, had started a prayer chain and were praying from wherever they were.  Prayers were pouring in from all over the world, I was so overwhelmed when I found out how many prayers were going up and how quickly word had spread.  People I had never met before, on their knees before our Maker, crying out for my recovery and healing.  WOW!!!

After they got a pretty good run down of the injuries in Artesia, they life watched me to Lubbock, TX.  Hubby couldn't fly with me because he needed to clean up and pack our bags.  So, one our students drove him like a mad man over there.  Hubby was the youth pastor of our church at the time.  Lubbock took their own scans and gathered all of the information they needed for my case.  Their report to Hubby was that my lower left jaw was broken in four spots (badly), left arm was broken, left orbital structure was crushed, left cheek was turned to dust, nose was crushed, and I probably wouldn't have sight in my left eye, if I was lucky enough to survive.  Sounds extremely bad, but wait 'till they sent me to Dallas as my final hospital!

I was life watched to Dallas (Parkland Hospital) because of the extent of my injuries.  When I arrived, I remember them asking me, "Why did they send you here?  They could have handled this back in Lubbock.  Do you know why they sent you here?"  The best response I could get out was, "I don't know where I am or how I got here."  Their scans and tests were showing things to be completely different from Lubbock's!  My jaw was not broken at all, my left arm only had a hairline fracture, and everything else was about the same.  Now, they had copies of Lubbock's findings, so the entire medical staff of both hospitals was in complete awe at this point.  God had healed even more during the flight from Lubbock to Dallas!  AMAZING!!! 

After a couple days passed, and I was able to know what was going on, they gave me the option of waiting for swelling to go down before doing surgery or doing surgery immediately.  I of course opted to wait on the swelling, because not doing so would require more follow up surgeries to fix the placement of reconstructive materials.  No thanks!  During the time that we waited on swelling, there were so many other miracles that were seen.  My arm was completely healed five days after I got there, no break or fracture at all, a 14 year old boy with similar injuries was completely healed of an infection from his body rejecting the materials, a man was shot in the head while protecting his sister and never had brain injury or anything, a homeless man was saved while talking to Hubby, my roommates marriage was restored, and the floor I was on was taken over with the joy of the Lord completely.  All of it was so absolutely amazing, I would never take any of it back.  Even my dad, who I had not seen in over eight years, showed up and started trying to restore our relationship!!  When I think of all that God did over that month, and is still continuing to do, I can't help but let the tears pour.  He is the best Father a girl could ever ask for!!!!

After 3 weeks of waiting for the swelling to go down, and waiting for the docs to quite being amazed at all the miracles that God was working in the process (it was fun watching them be so confused all the time LOL), we finally did surgery. They were able to rebuild my left cheek (it's titanium now), left orbital structure (bone graph from my skull and lots of plastics), and 3/4 of my nose (sylicon).  It was a 19 1/2 hour surgery all in all.  Everything went exactly as planned, and better even.  The Lord really blessed me with the best medical team for the job.  Getting the plastic surgeon I got, was in itself a true miracle. 

They weren't able to restore the full range of movement for my left eye though.   Basically, the muscles behind my eye had healed into fractures and the ruling was that they were permanently stuck and I would never have the ability to move my left eye to look around without a ver risky surgery that could cost the sight in my left eye. Not a risk I was willing to take. As long as my eye couldn't move around, they couldn't fix my eyelid (attach the lid muscles to my eyebrow muscles allowing me control again) because I wouldn't be able to look up to cleanse my eye during blinking.  So, they said I would have to stay like this for the rest of my life.

I believe that God will continue to work healing in my eye.  He has already set some of the muscles free, as early as two years ago in the middle of worship service on Easter Sunday. But, in the meantime, I have a different looking left eye that causes people to ask me what happened.  Anytime I get asked that, a huge smile takes over my face and the story of God's amazing power and love comes pouring forward.  I actually don't mind having an eyelid that doesn't open all the way, because it's an opportunity to testify.  So many people have drawn closer to God or come to God as the result of the testimony that God has given me.  It is so wonderful!!

Now, I do still deal with a lot of chronic pain as a result of the injuries, but it's getting better with help from Lyrica (nerve blocker).  I just started on that in January and it is amazing to finally feel normal for the first time in so long.  But, even the pain serves as an opportunity to testify, because people always want to know why I'm hurting.  So, I tell them :-)

This is a testimony that I will never quit telling.  I hope that by sharing it on here, it has been used to build you up in God and encourage you.  No matter how bad things may seem at any given moment, it could always be worse.  Even in the worse though, God is always right there by your side, holding your hand or carrying you through.  John 3:16 "For God so loved the world, that He gave His one and only Son, that whoever believes in Him, shall not perish, but have eternal life."

2 Timothy 1:7 "For God has not given us a spirit of fear, but one of power, love, and a sound mind."
  • This is the Scripture that was fully implanted into my mind, quoting it non-stop, as I went through the hospitals and surgeries.  With that verse leading the way, there was zero fear through everything, but tons of testimonies of His power, love, and peace.

Major League Baseball is Making Dreams Come True in the Tulsa Area

I am finally getting to sit down and "relax" for the first time today lol.  I subbed 7th grade Geography all day, then went straight to All Stars tryouts with the boys and a girl from my team.  So far, the head coach has said that all three are on the team.  They have a few more tryout days, but so long as some MLB style kids don't show up, they're all in.  Whoohoo!! 

The head coach played college and minor league ball, one assistant played college, the other assistant played majors for the Twins and the Bluejays, and the pitching coach is a retired major league pitcher (can't remember his name).  The boys are both being eye balled for pitching, but more so my oldest.  They are so excited and I am so proud of them!!  All of the coaches want to work with the three as much as possible, because they see real potential for huge growth in them as players and people. 

The league is entirely faith based, which is so awesome!  If they keep their current spots on the team, then we will be in Kansas City in July for All Stars weekend, with the boys going to everything, thanks to MLB sponsorship of the league.  This once in a lifetime opportunity comes completely covered financially (uniforms, the trip, Home Run Derby attendance, All Star game, everything) through the sponsorship.  God bless MLB!!!  They are really making a difference in a lot of kids' lives here in Tulsa.

Now, for what MLB is doing for everyone else outside of the All Star team in the Tulsa area.  MLB has sponsored this local league completely.  None of the children who sign up to play ball have any fees to pay.  Uniforms are covered, ball fields, equipment, vans to transport players to practices and games, a free training facility called World Baseball Outreach, everything.  There are over 500 children registered to play through the league this year.  Along with all of that, nearly all of the coaching staff on the field and at the WBO are college level, minor league, or former major league players and coaches that have settled in Tulsa. 

Not only that, but everything is entirely faith based.  So, these kids aren't just being taught baseball by some of the best, but are being ministered to and prayed with by these servants of God.  I was nearly in tears hearing about it tonight.  This organization and league have blessed mine and my boys' hearts so much already! 

Please, check out the WBO website, so that you too may be blessed by what the Major League Baseball is helping to do in the Tulsa area.  Too many times, we only hear about the bad things that happen in sports.  This truly needs to be shared with others, so that the good may overtake the bad.  I know major media probably won't cover something like this, but we can all be the media of good news and God's blessings!!

**Most recent testimony for this league:  On Monday, the head coach of the All Star team shared with his board members and staff members that the league was in need of a new 15 passenger van.  They all agreed to pray in agreement to find one at a very reasonable price, in very good condition.  The vans are used to transport players to the fields, the WBO, and will be used for the trip to Kansas City in July.  This morning, he received a call from a board member saying that he was to go pick up a new van this afternoon.  One of the board member's dads owns a business that deals with fleet vans and he donated a 2012, 15,000 mile to the league!!!  How awesome is our God???!!!  The coach was beside himself tonight at the abundance of God's blessings, sharing with anyone that would listen.

For Sale!! Homeschool Books

We homeschooled our boys for two years, using the My Father's World curriculum.  Our oldest (almost 13 now) surpassed my ability to effectively teach him in the areas of math and science.  Our youngest (10 now) severely missed the socialization of public school.  He's a very social young man, so it's important for him to be around people all the time.  So, we decided to put them back into public school this year.  They are both doing great so far!  Peyton is in 7th grade and taking Pre-AP Life Science, Pre-AP Literature, and Pre-Algebra.  Kayden is in 4th grade and continues to test well above his age group in most subjects.

Putting them back into public school was a hard decision, but we feel it was the right one for what they needed.  I am still a huge advocate of homeschooling though.  We all thoroughly enjoyed it and I believe that those two years played a significant role in who they are and where they are today.

Now though, I am left with stacks of homeschooling books that could be extremely helpful to other homeschooling families.  It would be a shame to have them sitting here and not being used.  So, I am offering the ones that I can part with for sale.

"When are the Girl Scouts going to be out selling cookies??"  I know we have all asked this question, in hopes that it would be soon.  If you're like me, you stock up on tons of cookies to get through the year, until they are out selling again.  We ration our stock for use in recipes, snacks, etc.  But, it never does last long enough.

Buying New Dishes For Cheap

Sounds impossible, right??  Surprise!!  It really isn't that difficult to do.  I'm not really a yard sale person, so I won't send you in that direction.  Personally, I find it to be pretty gross to buy used dishes.  They get washed of course, but it still kind of weirds me out.  Don't confuse me with a germaphobe though, used dishes are just one thing I can't get past.  Kind of like buying used underwear.  Gross!!!

When we moved from Kentucky to Oklahoma a year ago, we got rid of nearly everything we owned, including most cups, plates, bowls, etc.  If it was my silverware, cooking utensils, or anything used for mixing/cooking, we kept it.  But the rest was disposed of.  I won't tell you that we got rid of the dishes by selling them in our yard sale, because that would make you laugh at me after my little rant.  Instead, we'll just say that another family that needed them more than us now owns them.

Anyways, we have been starting over from scratch since moving here.  My father-in-law's wife gave us a small set of dishes to get us by, but I really "needed" a set of my own.  Okay, really I like any excuse to buy new dishes haha.  Who doesn't??  Since we are starting over on several items though, we have really needed to watch our budget.  So, I have been on the look out for a cheap, yet beautiful set of dishes for a year.

One option for finding cheap, yet awesome dishes is to find the nearest Ikea.  I am a huge fan of Ikea dinnerware, mixing bowls, and anything they have for the kitchen.  When we lived in Austin, TX, we would take at least one weekend a month to walk through Ikea and dream.  Many times, we came out with some new decoration, storage bin, or something for the kitchen.  The prices are really great for the quality of the product.  We have put the Ikea dinnerware through everything imaginable.  Seriously!!  They have been dropped, banged, licked by the dogs, kicked (from a drop stop attempt with the leg), and even set on fire.  Yep, you heard me!!  Set on fire.  That was some of our set from when we moved from TX to KY.  Hubby wanted to see exactly how much he could put the plates through before they finally broke on us.  It took a huge, TX style bonfire to finally break one.  It also took him throwing one as high as he could in the air, with it landing on the paved road before it broke.  If you have an Ikea near you, I would seriously look into the Dinera brand dinnerware.

Unfortunately though, we no longer live in Austin or have an Ikea anywhere near us.  I wish they had one in Tulsa, but they don't.  Shock!!  Even if they had one in Oklahoma City, I would go for the dinnerware alone.  That would be too easy, this is Oklahoma after all.  The land of nothingness and boredom.  Can you tell we don't like it here?  *Sigh*  Oh how we long for Austin again.  Maybe we'll be blessed with a job transfer for Hubby.

I have been keeping my eyes peeled whenever we have gone shopping anywhere for the past year.  Two months ago I found a set that I liked at Wal Mart.  It was a pretty set, with earth tone colors around the edges, almost making it look stony.  It still wasn't right though, and the price for the "service for 4", including coffee mugs I really don't need, was still $40.  I wasn't content spending that much, especially when I wanted a set that didn't include the mugs.

After nearly giving up on finding the right set for the right price, I decided to take one last look at Wal Mart last week.  I fell in love!!  The most perfect, simple, yet beautiful set was sitting on the shelf, staring me in the face.  It was as if I had heard it calling my name from across the store, because I was drawn straight to it.  It got even better when I realized it was a service for 4 that did not include the coffee mugs.  Whoohoo!!  I could have danced in the aisle based off of that itself.  It gets better though!  I found the set for only $10!!!!!

It turns out that having patience and avoiding impulse purchases really does pay off.  Who would have guessed??  So far, they seem very sturdy, tough, and easy to clean.  We've made it through a whole week without chipping anything so far.  The bowls could be a little larger, but that's okay.  The smaller size may help us make wiser decisions on ice cream portions.  Either that, or we'll go back for seconds and eat more than usual.  That one is going to depend on which day you ask me.

I can't promise that you will find $10 dinnerware sets at your local Wal Mart, but it is definitely worth a look.  For those of you near an Ikea, I'm jealous.  Enjoy the store for me next time you're there.

Our First Contest!!!

We are about to embark on the new adventure of giveaways!  How exciting!  Anyway, I think that you will all fall in love with the item that I have chosen for our first giveaway.  I found it at a local drug store.  You know, one of those family owned drug stores, with all of the really cool stuff that just have to have.  It fits the name of the blog, along with the attitude of most of my readers, so I couldn't pass it up.

Here chick, chick, chick!! Male or Female??

It all started on a beautiful day with my family about three weeks ago.  We were looking for a new truck for my husband, eating out, running errands, just having an all around good time.  Our leapord gecko had recently died after almost 14 years (she was 3 years old when we got her), so I thought it would be a neat surprise to go get a new gecko.

On our way to the pet store, hubby decided he needed to look at some things at the feed store.  No problem, right?  Wrong!!  The boys found the baby chicks. That really should not have been a big deal.  I mean, they've seen baby chicks at the stores before and it's never been an issue.  But, hubby decided to tease them with, "You should get some chickens so you have fresh eggs."  Big mistake Daddy!!  They took it as for real and permission to get baby chicks.

Long story short, we came home with 10, count them, 10 baby chicks, heat lamps, bedding, food, everything you would need to raise the babies into full grown chickens.  One problem.  We had never had chickens before and had no clue how to tell the roosters from the hens at that age.  YIKES!  This is pretty important information here.  Why weren't we taught this in health class??  I mean, seriously now!

We are now three weeks into raising these chicks.  Everything is going great, and we have even learned how to tell the males from the females by their wings (can be done the day they hatch).  Yes, even at this age, I can still learn something new!  I figured I would be kind and share our chicken experiences with you all, as we go along, so that you may learn something new as well.  If you already know most of this information, then help a woman out, please!!

The last two pictures are the ones that will show you how to sex your chicks.  Completely kid friendly!!

The baby chicks now (3 weeks after coming home).  Aren't they so cute?  Definitely getting bigger though!

The big one there in the middle, is a male.

The boys call this little girl Turbo, 'cause she is super fast.

Final count:  3 males, 7 females.  We will definitely have plenty of fresh eggs!

Male wing:  The feathers are all the same length and grow as one unit.

Female wing:  The feathers are different lengths and grow as two separate units.

Amish White Bread - Tutorial

This bread is some of the most amazing bread I have ever eaten!!  My boys, friends, and family all agree.  Actually, my family and some friends around the corner from me have regular standing "orders" for this bread.  The family around the corner will actually cut off chunks of the bread to hide from each other, hoping that they end up with the larger majority of it!  To me, that's a pretty big testimony of it's greatness.  I have now taken to making them each their own loaf :-) . 

Your ingredients: Bread Flour, Sugar, Yeast, Salt, and Vegetable Oil.  Pretty simple so far!

For this first part, you will take 2/3 cup sugar and dissolve it in 2 cups WARM water. Add in 1 1/2 TBSP yeast after the sugar is dissolved. Let it set until the yeast creates a micro foam. See how the yeast is starting to foam? Not done yet.


Ah! The yeast is all foamy and ready for the other ingredients.

To the foamy mixture, add 1 1/2 tsp. salt and 1/4 cup oil. Mix with a spoon and then attach your bowl to your mixer 'cause it's time to get doughy.  If you're mixing this by hand, stretch your arms out first.  You will get all the upper body workout that you will need for the day.

Add in 3 cups of bread flour and mix. You will be using your dough hook with the mixer set on 2. Don't forget to lock your stand in the down position or it will start bucking like a bronco later. Sadly, yes, I speak from experience LOL. After the first 3 cups are mixed in, add one cup of flour at a time for a total of 6 cups of flour in your dough. If you are mixing by hand, skip the next few steps and just add one cup of flour at a time (6 cups total).

This is what mine looked like after my 6th cup was mixed in. Still very sticky and clingy, which is not what you want. The cause?? Remember that last pic of the flour on the counter after cup 5? I needed to replace that flour in the dough. So, I added a 1/2 cup of flour and it was perfect!

See how it's no longer sticky and clinging to the dough hook? That extra 1/2 cup to replace what flew out on cup 5 was just what I needed. Time for it to rise!

Your well oiled bowl for letting the dough rise in (different from the bowl you mix the dough in).

Place the dough in the well oiled bowl. Turn the dough in order to coat the ball in the oil (lightly coated).

Take a CLEAN dish towel, wet it down, ring it out and place it over the top of your dough bowl. Let this rise for one hour.  I'm trying to get the bread to absorb a bit of Faith, Hope, and Love with my towel ;-)

This is what your dough will look like after it has risen for an hour. Yay!! Almost done. Just a few more steps. This is the point where my father in law likes to come in and make mention of the house smelling like a brewery. One of his favorite scents lol. He's a good ole' Irish man that used to brew his own beer.

You know all of that frustration you've been building up about...well, whatever it is? Time to take it out on the dough. Go boxing champ on that risen dough and beat it down with your fists!!

Now, knead it with your knuckles (kinda like giving it a lift and tuck massage) for about one minute.


Split the dough into two equally sized balls.

Shape each ball into a loaf. Best way to do this is to go back to your Pre-School days and roll it like a snake the way you would with your PlayDough. Take it between your hands and roll it back and forth, letting the weight of the dough pull it down and stretch it out. Place those loafs into two, well oiled loaf pans. Set your oven to pre-heat to 350 F while your let the dough do it's 2nd rise.  **NOTE:  Make sure you set yours smoother than my loaf on the right, it was having issues lol.

Let the dough rise in the loaf pans for 30 minutes. When that time is up, put it in the oven and bake for 30 minutes.

Final product!! Mmmmm mmmm mmmm  Makes you want to stuff your face with carbs huh?  Don't worry, what I can't see, I can't speak about.

Whipped Butter - Tutorial

Making whipped butter is extremely easy, but it does take some time and patience.  Read through the pictures and you'll be amazed at how simple it is to have your own homemade whipped butter.  It will change your life forever!  I use it in all of my cooking.  Mashed potatoes made with this butter are the best I have ever tasted.  No joke.

Let's get started! Dump one quart COLD Heavy Whipping Cream into your bowl.

Start out SLOW! If you try to move through the settings too quickly, you will throw cream all over your kitchen lol. I started out on 2.  BTW, I totally do not speak from experience about throwing cream all over my kitchen. *blink blink*  Not buying it??  Yeah, me either LOL.

As it got a little more substance to it, I moved up to 4. See how it's still throwing cream up the sides of the bowl? Just move one setting at a time to make sure you avoid a mess.

Starting to get some thickness to it, so I worked my way up to 6.

Now, we're just about to whipped cream, so I moved it up to 8 which just so happens to be the factory recommendation for whipping cream.  In case you were wondering.  While I'm doing all of this waiting, I tend to make up silly songs in my head.  You should try it sometime.  It's really entertaining!!

Ahhhh, if we were making whipped cream, this is where we would stop, add a little vanilla, maybe some sugar, or leave it plain. But, we're not doing that today, so let's keep going. Once you have stiff peaks forming, lower your setting back down to 4.

Just let it keep going at the 4 setting.

Getting even thicker now! Keep a very close eye on the change that is about to take place in the thickness and texture of the whipping cream.
What a beautiful site!! See how it's starting to go from whipped cream to almost a cottage cheese type texture? That's what we're looking for!!

Let it beat just a little bit longer. You want this to happen when you lift the mixer out of the bowl. Gorgeous, stuck together, clinging to the mixer, WHIPPED BUTTER! Knock off the butter into the bowl. Add a dash of salt, if you want it salted (use your own judgement for measurement). Now, you can add food coloring to this if you like, but I tend to leave mine just a pretty, fluffy white.

Just put it in your bowl for the fridge and voila! You're done. Mixing up one full quart will make 2 of these Cool Whip bowls of butter. Use one and freeze the other, or be a good person and pass on a bowl of homemade whipped butter to someone else. I promise, they'll love you for it!!
